A sense of proportion… in obtaining pleasure

An instructor who teaches future bartenders the art of sommeliers and bartending has a great responsibility. Which skills a bartender obtains and whether he will be able to bring them to the final consumer depends specifically on him. We talked with Nikolay Beresnev, a Professor at the Institute of hotel business and tourism of the Peoples' Friendship Russian University, a winemaker with 30 years of experience, and a great connoisseur of beverages.

— Nikolai, the KiN Group has recently launched a project called «Know Your Limits! », the aim of which is to promote responsible alcohol consumption, especially among young people, and to show people how to properly drink alcoholic beverages.

— I believe that specifically having knowledge of a particular beverage – its ways of consumption and its history – can change people’s attitude about the drinking process for the better. Information determines the culture of alcohol consumption. Perhaps here lies the solution to problems of abuse. A famous poet and writer, Rasul Gamzatov, said that everyone can drink, but one should know where and with whom to drink, what to drink to, how much and when.

— What does the notion of a «drinking culture» imply for you?

— Limit yourself – perhaps this is the sense of culture in general, but especially for drinking. Cultured people will not allow themselves to step out of line in society. How is it possible to let an uncultured attitude affect your own health and body?

— What is the main difference between an amateur and a connoisseur of beverages?

— The difference lies in the word «connoisseur». This is, of course, knowledge and experience, which can be obtained, if desired. A person does not necessarily need to be a bartender or a sommelier in order to be an expert. You need to sense which drinks are compatible with each other, with which food you can have this or that drink, at what time of day and even in whose company.

— What does knowledge about drinks provide?

— The main thing is that, due to a person’s knowledge, a choice appears. He will pay attention to quality products, learn to choose exactly what is needed, and not simply rely on the price, brand or color of a drink. Naturally, he will regard this drink not as a means to get drunk and befuddled, but as an object of delight. And you can enjoy alcohol, only if you treat the process of consumption with emotion, sensibly and without haste.

— How have you defined your own limit for drinking? What would you recommend to young people? When is it necessary to stop?

— When you start to feel that the sense of novelty and delight of a drink fades, and that mere intoxication begins, then it is time to stop. At a young age the body is strong, and you experience a deceptive feeling that you can drink a lot. But the main thing is to understand that you cannot treat alcohol consumption as a sport; this is very harmful and will lead to negative consequences in the future, in adulthood! Therefore, I think that the sense of proportion in namely obtaining pleasure, and the enjoyment of a drink’s bouquet. By the way, this refers to any beverage, since not only does brandy have a bouquet; good vodka has its own unique flavor, as well, in which the taste and smell of wheat or rye is unique and may have thousands of tones. All connoisseurs know this and are able to distinguish them perfectly.

— Should an alcohol manufacturer take care of its customer?

— Of course! It is simply obliged to do so, and this does not only concern the control of judicial and tax authorities. The quality of alcohol should not be measured solely by the government’s dry standard. Alcoholic beverages should be made with the soul, and constant monitoring not only of quality but also of the bouquet that makes up a drink is necessary. Indeed, the results of this labor in the end will appear on our table, where we converse with friends or relatives. It is a common practice that we always try to put the best products on a festive table so that a party will be well—remembered, and so that everybody’s spirit is high.

— Have you tasted our KiNovsky brandy?

— Of course. Besides that, I use KiNovsky during tastings. For example, I have just given a lecture at the Museum of Cognac History, in which I, as usual, told students how to drink cognac. During the lecture, I held in my hands a glass with three-year-old KiNovskiy.

— Due to the nature of your work you have to try different drinks. What could you say about French cognacs and brandies of the Moscow KiN factory?

— Just today I have attended the tasting of differently aged cognacs from a famous French cognac house and compared them with KiNovskiy, according to taste and quality. KiNovskiy has its own special nature; it is much more saturated with color. A vanilla flavor is vividly present in the French cognac presented at the tasting; the taste of KiNovskiy seemed more harmonious. A characteristic feature of KiNovskiy’s flavor is its vividly expressed wine tone, and the prevailing clear aromas of grapes and raisins. Concerning quality – the Moscow KiN factory’s brandies are no worse than the French. I believe that KiN is the only company in Russia which is deeply and seriously engaged in the production of such a complex product with a rich history.
